I need to do changes in the toradex_defconfig but it is removed in the latest linux-toradex.

Currently, there are no plans to support the e-con AR0521 camera on BSP 7 and higher.
For testing purposes, we recommend using the CSI Camera OV5640, which counts with mainline support and makes testing much easier for developers.
