If your requirement is of AI and Machine learning, then iMX8M Plus would be correct fit for the requirement.
2. Does the board support drivers for the GSM module Quectel EC25 Mini-PCI-Series?
Yes provided all drivers are include as per Quectel documentation.

It depends which OS you are using, with TorizonCore you have option of using Debian container, so build and install your application specific requirement inside container.
With BSP Linux everything needs to be built in custom Linux images using Yopcto project.
