I have never used this kind of SPI display.
But from the device tree bindings documentation, seems like the device tree setup for this display is different from what you did: sitronix,st7701.txt « panel « display « bindings « devicetree « Documentation - linux-toradex.git - Linux kernel for Apalis, Colibri and Verdin modules
Seems like it is expected to use the graph concept in your device tree.
EDIT: I shared the wrong documentation. These is the right one:
