my carrier board has 3 UART / Serial RS-232 ports that I need to configure/use from within my docker node app. Can you please explain how I can do this

So, do you need to have 2 Ethernet Ports and 3 UART interfaces? Please confirm.

About your carrier board, are the necessary components already configured in its device-tree within TorizonCore?

Are you using a custom-made or a Toradex carrier board?
